Inspired by the Pacific Northwest, this pie is our homage to horticulturist Henderson Luelling, a.k.a. the “Johnny Appleseed of the West.” Luelling set out for Oregon from Iowa in 1847 with 700 saplings and helped establish the region’s pear produce preeminence. Surely he would appreciate this drizzled delicacy incorporating the fruits of his labor.

For the crumble topping:

  • 1/2 c.

    all-purpose flour, spooned and leveled

  • 1/4 c.

    old-fashioned oats

  • 1/3 c.

    packed light brown sugar

  • 1/4 tsp.

    kosher salt

  • 1/4 c.

    cold unsalted butter, cut into pieces

Directions

  • Step 1Preheat oven to 400°F with oven rack in lowest position. On a lightly floured surface roll dough to a 13-inch circle. Fit into a 9-inch deep-dish pie plate. Trim excess to 1 inch, fold edges under, and crimp. Freeze 20 minutes. 
  • Step 2Make the crumble topping: Stir together flour, oats, brown sugar, and salt in a bowl. Work butter into dry ingredients, using fingertips, until completely incorporated. Cover and chill. 
  • Step 3Make the filling: Line a rimmed baking sheet with foil. Whisk together granulated sugar, cornstarch, salt, cinnamon, ginger, nutmeg, and allspice in a bowl. Add pears, lemon juice, and brandy, and toss to coat. Transfer filling and any juices into piecrust, and place on prepared baking sheet. Top with crumble topping, breaking into clumps as needed. Bake 30 minutes. Reduce heat to 375°F, and bake until golden brown and juices are thickened and bubbling, 30 to 35 minutes. Cool completely on a wire rack. 
  • Step 4Make the spiced caramel sauce: Bring cream and sugar to a boil, stirring often, in a medium saucepan over medium-high heat. Boil gently for 5 minutes. Remove from heat and stir in brandy, butter, vanilla, salt, cinnamon, nutmeg, ginger, and allspice. 
  • Step 5Serve pie with spiced caramel sauce alongside.
